The science of food products related to science of commodities, deals with the study of food as consumer value and the factors that that condition the degree of utility, with technical and economic research of food in an integrative concept of utility, their quality and efficiency related to economic and social necessity.
The science of food products studies the products in a complex way: the structure, composition and properties that determine the quality, the factors of quality (product design, raw material, production or processing technology, cultivation, and packaging), assortment, the way of assessing and maintenance the quality in the areas of circulation and consumption, environmental and consumer protection. All these form inseparable domains and functions (technical, economic and social), which are closely interdependent in all spheres of their technical circuit: design -production - movement - consumption - environment.
